The Blue Margarita jelly is a molecular cocktail made ??with agar agar, and solidified into a half a lemon peel, then cut in slices.
Blue Margarita Jelly
100 ml Blu Margarita
50 ml Simple Syrup
2 gr Agar Agar
Prepare the Blue Margarita cocktail and set it aside in a container, or in the same shaker in which it was mixed. Cut a lemon in two half pieces and squeeze it, preserving the half peel. Put in a saucepan the simple syrup and warm it up, then dissolve inside of it the agar agar mixing it slowly, and avoiding the formation of lumps. Bring to a boil until the agar agar has not been nearly solidified, becoming a jelly. Pour the Blue Margarita cocktail in the saucepan, and stir well so that the agar does not crystallize, but amalgams well with the drink. Pour the product obtained in the lemon peels, and let it cool in the refrigerator for 20 to 30 minutes maximum.
