A distillate/liquor can be defined as a fermented mash with no less than 35,7% of alcohol by volume. It is obtained by distillation in a still with use of different raw materials: cereals, potatoes, sugar cane, wine, vinasse, fruit, etc. There is no add of sugar during the preparation. Thus we have Vodka and Whisky from grain, Rum from sugar cane, Brandy from wine, Grappa from marc, Kirsch from cherries, Calvados from cider and so on.
