Mother Liquor

Mixture of watersodium alginate, and liquid sugar useful to spherificate spirits, liquors or products with which it is ineffective the “basic spherification” technique.

 

 

It is prepared by mixing together with an electric mixer:

250 ml Water

250 ml Liquid Sugar

4 gr Sodium Alginate

 

Pour for first water and sugar because the sodium alginate could remain attached to the bottom of the container.
