Molecular Cocktail ideal at any time of the day based on milk, cream and coffee liqueur caviar garnished with a sprinkle of cocoa powder.
Caviar Coffee
(for 10 portions)
2 oz Coffee Liqueur
1 gr Sodium Alginate
6 oz Half-Half Mix
Calcium Bath
Cocoa Powder
Pour into a tall container the coffee liqueur, add the sodium alginate and mix everything with an electric mixer until there will be no more lumps. Pour into a glass, and let it stand in a refrigerator for one hour. Make the Half-Half Mix. Pour coffee liqueur combined with alginate into a syringe and drop it into the calcium bath by pressing gently on the plunger. Collect the caviar with a slotted spoon, and rinse with water. Put an Half-Half Mix trivet on a finger food spoon, and sprinkle lightly with cocoa powder. Place a teaspoon of caviar on the bed and serve.
